| Аннотація: | The article explores key trends and innovative approaches to organizing bar activities within the structure of the modern restaurant business. The transformation of the bar industry under the influence of the «experience economy», digitalization, and environmental trends is analyzed. The main formats of modern conceptual establishments are identified, and innovative technologies used in mixology and bar management are systematized. It is proven that the implementation of a scientific approach and sustainable practices are key factors in increasing a bar`s competitiveness in the service market. |
